Paleo banoffee cheesecake

This is the ultimate paleo pud. If your stuck for what to have for desert whether it's just you or you've got some people coming over. This is so quick, easy and totally delicious. It would be so easy to sit there with a fork and devour the whole thing in one sitting and as its made purely from paleo ingredients why not...

Base:
1 1/2 cups of almond flour
2 heaped tablespoons of coconut oil melted
2 tablespoons of raw honey
2 teaspoons of vanilla extract

Banoffee Caramel:
1 ripe banana
1/2 cup of coconut oil
2-3 tablespoons of raw honey (depends on how sweet you like it)
1/4 cup of almond butter

To Make:
Mix the almond flour, coconut oil, honey and vanilla and press into a 22cm springform cake tin and bake for 18 minutes on gas mark 4. Leave to one side to cool slightly.

Once the base is out the oven start on the caramel topping. Mash the banana, add to the coconut oil, honey and almond butter and melt in a saucepan. Once its melted blend together until smooth. Place this on top of the base and leave in the fridge or freezer too set.
